What is demineralised whey powder?
Demineralised whey powder is a product obtained during the cheese-making process. It undergoes a demineralisation process to remove mineral salts, followed by gentle pasteurisation and spray drying. Whey provides added nutritional value and improves the texture of the food products in which it is used. It also contributes to sustainability by enabling the reuse of water.
Nutritional value
Demineralised whey powders are value-added food products, with protein levels above 11% on a dry matter basis and ash content below 5%. These proportions enhance their nutritional and functional properties, thanks to their lower ash content and higher levels of protein and lactose.
The product is a fine, homogeneous cream-coloured powder with a characteristic dairy taste and aroma.
