Ingredients for the dough
- 500 g wheat flour
- 125 g of AIRA clarified butter
- 170 g lukewarm water
- Salt
- 1 dessert spoon of baking soda
Ingredients for the filling (to taste)
- Tres Viajeros or Pambre cheese
- Cooked ham
- Lettuce
- Tomato
Step by step
1. Prepare the dough
In a bowl, combine the flour, salt, AIRA clarified butter and baking soda. Knead by hand, adding the water in three stages and gradually incorporating it into the mixture. Continue kneading on a work surface until you have a smooth, even and pliable dough.
2. Leave to rest
Place the dough in a bowl, cover and leave to rest at room temperature for about 30 minutes, until it reaches the right consistency.
03. Roll out the piadinas
Divide the dough into 6 equal portions. Lightly flour your work surface and roll out each portion with a rolling pin to make a thin piadina, approximately 2 mm thick. Trim the edges with a knife if needed to achieve a more even shape.
04. Cook in the pan
Heat a non-stick frying pan without adding any fat. Cook each piadina for about 2 minutes on each side, until lightly golden.
05. Fill and enjoy
Fill the piadinas with your favourite ingredients and add Tres Viajeros or Pambre cheese for a special touch. For melted cheese, return the filled piadinas to the pan for another minute. Ready to serve and enjoy!
