Ingredients
- 2 eggs
- 50 ml anise liqueur or sugar cane spirit
- 500 g wheat flour
- 100 g AIRA clarified butter
- Zest of 1 lemon or orange, to taste
- 150 ml warm water
- A pinch of salt (5 g)
- Extra virgin olive oil or sunflower oil, for frying
- Icing sugar, for dusting
Step by step
- Pour warm water into a bowl and add a pinch of salt, the previously melted AIRA clarified butter, lemon or orange zest, sugar, anise and eggs.
- Beat until there are no lumps and then add the wheat flour, first mixing with a whisk and then kneading by hand.
- Once we have the dough, take portions and roll them out with a rolling pin.
- For frying the Carnival Ears, use a frying pan with plenty of oil and fry the Carnival Ears on both sides.
- Finally, remove them from the pan and place them on a plate, then sprinkle with icing sugar to taste.
